1.     buononaturale offers three versions of bronze wire-drawn pasta, organic and not: dry, fresh, frozen. All three types are made in our semiartisanal labs on the Central-Southern Italian Apennines, in the fertile Province of Irpinia/Avellino.  We only use the highest-quality raw ingredients sourced locally from the Region (of Campania), or Italy, at large: for example, IGP Sorrento (sfusato) lemons for our Lemon potato buttons and whole pieces of 24-to-30-month-old Parmigiano Reggiano for our Ham raviolini.  We then cook every raw ingredient in-house.  Thus, we go from raw to final, without using any semi-finished products in between. Our dry pasta (with 24-month shelf life) withstands the cooking process particularly well because of the longer-than-usual desiccation process, averaging 32 hours, thus offering greater flexibility in busy kitchens as well as a uniquely flavored product.  Our fresh pasta (with 45-day shelf life) undergoes light pasteurization to preserve its organoleptic and biochemical properties unaltered while guaranteeing food safety.  Our frozen pasta is just our fresh pasta abated at ultra-low temperatures to achieve a longer shelf life of 18 months.  The latter two types include potato buttons (purple or lemon-flavored), scialatielli, and ravioli with different fillings (baccalà or cod, pumpkin, etc...)
